·if you have, you will agree it's rabbit in its
most heavenly form.
We chose a few rabbit recipes to launch
this new department because of the cur·
rent meat situation and the rapidly increas·
ing abundance of wild and domestic rab·
bits in all parts of the country. Now we
want to share with you a highly prized
recipe for old· fashioned Gypsy rabbit din·
nero
In· old England the Gypsies were known
as poachers deluxe. Nothing seemed to
escape their crafty hands and rabbits were
particular favorites with them-and for a
reason . . . the lowly rabbit was the begin·
nings of an exquisite dinner that seemed
worth the risk of stealing them. Here is
our recipe: '

Old· fashioned Gypsy Rabbit Dinner.
Clean and skin a 3·pound rabbit and cut
into serving pieces. Place in a kettle with
an ordinary bouquet garni made with 1
large bay leaf, 3 sprigs green celery leaf
tops, 8 sprigs of parsley, 1 sprig thyme,
and 2 whole cloves, tied together with
kitchen thread, and 5 medium-size onions,
minced, chicken fat the size of a small
egg, 6 crushed peppercorns, and salt to
taste. Cover with equal parts of water
and red wine; bring to a rapid boil, lower
the flame, and let simmer very gently f{)r
2% hours without distlJrbing.
Next add 1% cups diced carrots, · 12
small white onions, 12 small fresh mush·
room caps, peeled, and 18 small raw pota-
to .balls, and continue cookin!1'_ c?vered,
untIl the vegetables are tel]der, 'whlCh re-
quires about 25 minutes.
. .
Remove the bouquet garni, then thicken
the mixture with 2 tablespoons kneaded
butter (equal parts butter and flour
kneaded together), adding 1 generous
tablespool! finely minced parsley. Continue
simmering for 4 or 5 minutes, then bring
to a full boil, and add the following
dumplings:
Sift together 1 cup flour, 2 teaspoons
baking powder, and a pinch of salt; ' then
add alternately 1 whole fresh egg beaten
until light and enough milk to make a stiff
batter. Drop by small tablespoons atop
the rabbit ragout and let rise; then cover,
and cook for 12 to 15 minutes. Remove the
lid, serve the portions along with hot rolls
and marmalade, and enjoy a rabbit dish as
old as Romany itself.
Concluding our superb rabbit recipes
will bring our tried and tested Rabbit en
Terrapin next month. You'll love it, too.
Send in your questions on the prepara·
tion of any special dishes and we'll be glad
to give you our recipes for giving them
new glamor. And, if you have any unusual
recipes, why not share them with us?
We'll be glad to have them.
